How to declined a job after excepting +signing terms and conditions?

I have excepted a job a few weeks ago in October, I’m to start in the new year January. I have signed terms and condtions -its a permenant job.
However, I may have another late job offer which is better in terms of commuting to work.
How can I decline my excepted and signed offer due to start in the new year if this other offer comes thru ?

I do accounts payable and accounts recievable in the daytime 8-5. I need a part time night job. Other than restaurants and bars any other suggestions as to what other jobs are there at night? To where I can make decent money? I live in Buena Park and day job is in Huntington Beach California.
